The Scottish countryside in spring can be a starkly beautiful spectacle, the sort of thing that can inspire poets.

The culinary creations live up to the setting. Master chef Paul Moffat uses freshly-sourced, local ingredients in his creative contemporary menus, stylishly presented.
The menus change regularly, according to seasonal availability. Typical dishes might include breast of guinea fowl with aromatic red cabbage, salsify and morels; fillet of red mullet with baby fennel, asparagus and wild mushrooms, and iced honey parfait served with granola crumble, toffee sauce and golden raisins.
