The Rocpool’s Chez Roux restaurant is overseen by the legendary French chef Albert Roux. His goal is to recreate the good and honest country cooking that he remembers from childhood. So you can expect quality Scottish ingredients prepared with a distinctly French flourish.
Menus are updated regularly, but starters might include the charred local leek consommé with St. Brides free range chicken and truffle tortelloni, the Moray Firth blue tail lobster mousseline with beignet of the claw, baby spinach and sauce americaine, and Albert Roux’s classic soufflé suissesse.
Mains could feature the butter poached fillet of skrei cod with baby squid bolognese, roast Jerusalem artichoke, cep duxelle, lemongrass and saffron-scented fish cream, the Campbell’s Gold Scotch rib-eye steak, fine beans, fresh chipped potatoes and bearnaise sauce, and for vegetarians, the heritage potato and black truffle risotto with vacherin Monte Or croquettes.
Expect distinctive desserts too, which might include the coconut meringue, rhubarb sorbet, sea salt and hazelnut crumble or the iced white chocolate semifreddo with burnt marshmallow, rum roasted pineapple, praline crémeux and brown sugar brittle.
The lunchtime RouXpress menu is a novel way to sample the dishes on offer, as it consists of four smaller courses served at the same time. This menu is available all day in the bar.
