The Head Chef at Melville Castle serves seasonal, modern Scottish Cuisine with a strong focus on high quality, locally sourced ingredients.

The menus change regularly but typical starters include the gravadlax of Wester Ross salmon with pickled cucumber, lemon, wholemeal bread and dill mayo while popular main courses include the roasted breast of duck, with dauphinois potatoes, butternut squash, curly kale and a Grand Marnier sauce.

‘Great hotel, excellent dinner. My partner and I stayed at the hotel for my birthday. The hotel is beautiful with lots of character and gives you a real feeling of staying in a castle. Our room was very clean, well equipped and had beautiful views. The dinner was a real treat. It was the highlight of our stay and I would definitely recommend it!’
