The Head Chef at Melville Castle serves seasonal, modern Scottish cuisine with a strong focus on high quality, locally sourced ingredients.

The menus change regularly but typical starters might be the chicken liver pâté with red onion chutney and Melba toasts or the gravadlax of Wester Ross salmon with pickled cucumber, lemon, wholemeal bread and dill mayo.

Popular main courses include the beer-battered Eyemouth haddock with hand-cut chips and mushy peas or the ale-marinated shin of beef in a wonderful crust pastry, with its own rich gravy and winter mash.
