Opus One Restaurant, located within the New County Hotel in Perth, opened in April 2008, and quickly gained many awards and accolades under its founding Head Chef Ryan Young. Current awards include Urban Restaurant of the Year 2010 at the Scottish Restaurant Awards and City Restaurant of the Year 2010 at the Scottish Hotel Awards.

Continuing Ryan’s good work, our new Head Chef Romi Denesle has maintained those high standards and retained the restaurant’s two AA Rosettes. Romi, from Normandy, began his career at fifteen. He worked at Charlot Roi des Coquillages under Marc Chalopin, and Louis Grondard’s two-star Michelin restaurant, Drouant, before moving to England to work at the Michelin-starred restaurant, Fleur de Sel in Sussex. Recently, he worked at Dalhousie Castle and The Ardeonaig Hotel on Loch Tay.

Romi’s emphasis at Opus One is on serving fresh local produce, with a French twist.
