Modern Scottish restaurant in Hilton Glasgow
With a name taken from the Gaelic for ‘great taste’, Morblas Seafood & Grill is a stylish, contemporary restaurant in the Hilton Glasgow on William Street. A bright, airy space with wood-panelled walls, Morblas has been designed to reflect Scotland’s rolling landscapes. Warm, welcoming service and the finest, locally sourced ingredients also fly the flag for Scottish hospitality here.
Modern European and Scottish dishes
Morblas uses the best of Scotland’s larder. Some dishes, like the Scotch fillet steak from the grill; the hand-dived scallops or the whole lemon sole, are beautifully simple. Others, such as the signature dish of lamb loin and shoulder with shallot potato cake and Koffman’s cabbage, demonstrate the kitchen’s cutting edge techniques.
While Scottish ingredients feature prominently, the kitchen also takes inspiration from other culinary traditions, as show in the wild mushroom ravioli with truffle gnocchi and enoki broth. The desserts are a talking point. Recommendations include the salted caramel tart and mojito sorbet.
Local attractions and transport
Morblas is on William Street in Glasgow’s city centre, close to Glasgow landmark Charing Cross. Set in the city’s financial district, it is within walking distance of the shopping hubs Princes Square and Buchanan Galleries.
It is easily accessible by train from both the Charing Cross and Glasgow Central stations and is set near many major bus routes. Concerts at the SSE Hydro or the SECC are a short taxi ride. There is on-site pay parking.
