Cooking demo: Cafe Andaluz Glasgow cook hot & cold Spanish tapas
Allan MacDonald, head chef of Cafe Andaluz in Glasgow's West End takes us through his professional kitchen and cooks us a selection of delicious hot and cold Spanish tapas:
* Ensalada Andaluza, a salad of asparagus tips, artichoke & sun sunblushed tomatoes with a sweet hinamin dressing
* Pollo Rebozado con Miel, chicken fillet in a crisp batter coated with Spanish honey & rain mustard
* Pollo Marinado, pan-fried sliced chicken breast marinated in paprika, lemon & coriander, served with a chilli yoghurt
* Vieiras con Serrano, seared king scallops with basil creamed leeks & crisp serrano ham
* Ensalada Sevillana, roasted beetroot, Seville orange & green bean salad topped with crumbed goats cheese & croutons.
* Tabla de Ibericos, a platter of Serrano ham, aged Iberico chorizo, Lomo & Manchego cheese
