Local and seasonal sourcing are the watchwords here which means scallops from Loch Fyne, smoked salmon from the Shetlands and Ayrshire lamb. The kitchen is particularly proud of its 28 day aged beef from the Mey estate in Caithness. The ingredients are used in dishes as traditional as the braised shin of beef with caramelised onions and a wholegrain mustard mash or in more contemporary combinations such as the scallops with broad bean puree and a pancetta crisp.
