The Pompadour by Galvin is a landmark Franco-Scottish restaurant at The Caledonian, a Waldorf Astoria Hotel, on Edinburgh’s Princes Street. It combines the best of classical French-inspired cuisine with locally sourced Scottish ingredients to provide a unique fine dining experience.
Classic French Inspired Cuisine in Edinburgh City Centre
The restaurant is led by brothers Jeff and Chris Galvin who have earned multiple Michelin stars and AA Rosettes. Acclaimed chef Fraser Allan is the Executive Chef charged with overseeing the brothers’ vision.
The Pompadour by Galvin offers several innovative menus bursting with seasonal Scottish ingredients, skilfully prepared using classical French techniques.
Signature dishes include starters such as the ravioli of rabbit with ricotta, sarriette and artichokes barigoule and, among the main courses, the seared fillet and slow cooked Angus beef with potato galette Lyonnaise and creamed spinach.
The wine list is superlative.
Stunning Listed Building, Cocktail Salon
First opened in 1925, the listed interior of the Pompadour restaurant has been sensitively restored. The restaurant is said to have the best table in Edinburgh, with impressive views overlooking Princes Street and Edinburgh Castle.
The atmosphere in the Pompadour by Galvin is intimate but relaxed while the restaurant also houses its own exclusive cocktail salon – perfect for pre-dinner aperitifs or a post meal coffees and digestifs.

Located on Princes Street, The Pompadour by Galvin sits in the heart of Edinburgh. It is a short stroll from the boutique shops of George Street and the West End and approximately a 15 minute walk from both Haymarket and Waverley Train Stations.
